This week, my soup recipe is coming to you once again courtesy of Relish. If you haven't entered to win a years worth of meal plans you will want to do that today! This was our Thursday meal, according to the grocery plan, and we enjoyed it!
I must admit that I was not very hopeful for it's dinner time success as I smelled it heating in the crock pot throughout the day. I was even more nervous when Kevin exclaimed that our house smelled "fishy," as we walked in after work. However, the soup turned out to be a palate pleaser after all.
Slow Cooker Sausage and Tortellini Soup
2 - 14.5 oz. cans of Italian style stewed tomatoes, undrained
3 cups water
2 cups frozen cut green beans
10.5 oz. can condensed French onion soup
1/2 pound spicy Italian sausage links, fully cooked and cut into 1/2 inch slices
9 oz. package of fresh cheese tortellini
1/4 cup Parmesan cheese, shredded or shaved
In a slow cooker combine tomatoes, water, green beans, onion soup, and sausage. Do not add the tortellini until later. Cover; cook on low for 8-10 hours or high for 4-5hours. 15 minutes before serving, turn the slow cooker to high and add the tortellini. Garnish with Parmesan.
