I really enjoy getting the Kraft Food & Family recipe idea magazine each season. There were several yummy looking salads in the Summer '09 edition. The recipe featured here today is the first one we tried. Yummy!
Fruit & Almond Salad
5 oz. salad greens
11 oz. mandarin oranges (drained)
1 cup fresh raspberries
1 cup mozzarella cheese
1/3 cup sliced almonds, toasted
1/4 cup light raspberry vinaigrette dressing
Combine all ingredients (except dressing) in a large bowl.
Drizzle with dressing just before serving.
Toss to coat!
If you are wondering how to toast almonds, here are some notes:
Spread nuts in a single layer in a shallow baking pan
Bake at 350 for 10-15 minutes or until golden brown
