Saturday Salad

I really enjoy getting the Kraft Food & Family recipe idea magazine each season. There were several yummy looking salads in the Summer '09 edition. The recipe featured here today is the first one we tried. Yummy!

Fruit & Almond Salad
5 oz. salad greens
11 oz. mandarin oranges (drained)
1 cup fresh raspberries
1 cup mozzarella cheese
1/3 cup sliced almonds, toasted
1/4 cup light raspberry vinaigrette dressing

Combine all ingredients (except dressing) in a large bowl.
Drizzle with dressing just before serving.
Toss to coat!

If you are wondering how to toast almonds, here are some notes:
Spread nuts in a single layer in a shallow baking pan
Bake at 350 for 10-15 minutes or until golden brown
Stir occassionally

Please add a link to your salad recipe in the comment section. I will add a permanent link to the post after I review your comment. Thanks!

  1. A local restaurant here serves this salad in the summer! It is yummy.

    Have a great weekend.

  2. I love my Kraft Mag, too. I have all of them from when they first started coming out and frequently use them in menu planning. Good stuff!!

I've posted a salad recipe this week. :-)

  3. Ha, I already had my post ready to go when I came over to find...you also used a Kraft recipe with raspberry dressing. Too Funny! Here is mine: http://katiesnestingspot.blogspot.com/2009/05/saturday-salads-grape-cheddar-and.html

  4. This sounds delish! I have been big on salads with gorgonzola & pears and nuts. This would be a great change of pace for me!

  5. Looks yummy! I wanted to let you know that I tagged you to list 6 unimportant things that you love. Go check out my blog and then spread the around the happiness. Hope you have a good weekend.

  6. I'm such a wimp! I don't think I would dare to try this. I'm sure it would be a hit, but I'm always afraid to try things that I can't "visualize" going together.

Thanks for taking a moment to comment. I love to hear from you!
