Soup-er Saturday

Tortellini Soup


3 can chicken broth

(9-oz.) packages refrigerated cheese-filled tortellini

14 oz. can diced tomatoes, undrained

4 green onions, chopped

2 garlic cloves, minced

2 tsp. minced, fresh basil

8 oz. fresh sliced mushrooms

Garnish: fresh shredded Parmesan cheese

Bring broth to a boil in a large sauce pan over medium heat. Add tortellini and the rest of the ingredients. Reduce heat and simmer for 10 minuts. Garnish.

Here in our corner of the world the weather is starting to get a bit warmer. With warmer weather my meal planning thoughts switch from soups to salads. So, this week will be the last edition of Soup-er Saturday until September rolls around.

Instead I will be hosting "Saturday Salads!" Start thinking about your favorite salad and/or dressing recipes and be ready to link up next Saturday!

    Your soup recipe looks yummy. We love soup, especially in the winter. Have to admit I don't do anything fancy with salad. Just greens and a couple of vegies.

  7. I am def making this, this week. I love tortellini's.

    I've read this blog before, and never put two and two together that you have the other ABC & 123 blog! I guess I'm a little slow! Everyone puts buttons up on their sites, I guess which is why it never dawned on me.
