I visited Recipe Goldmine today to find some fun Irish soup recipes to try this week and next. Today's soup-er recipe is a fun one for the kids, because it comes with a cheesy surprise.
Pot o' Gold
2 cans tomato soup
2 cans water
1 tube biscuits
1/2 pound sharp cheese
Mix soup and water in big pot and bring to a boil.
Flatten each biscuit and wrap around a cube of cheese.
Drop into boiling soup. Cover and cook 5 minutes.
Today I am making a simple soup recipe for a scrapbook crop. One of the ladies gave me this recipe to try and I am just throwing a few batches in the crock pot so it will be ready for the 17! of us for lunch.
White Chili
2 cups of cooked, cubed chicken
12 oz. of Monterey Jack cheese
14-16 oz. jar of salsa
1 large jar of Northern Beans
1 Tbls. cumin
Heat & serve with sourcream & tortilla chips.
I'll have to let you know what I think of it after it's been tasted:)
