Soup-er Saturday

Chicken Enchilada Soup
2 cups cooked & shredded chicken
4 cups chicken broth
1 cup masa harina
3 cups water
1 cup enchilada sauce
16 oz. Velveeta cheese
1 tsp. salt
1 tsp. chili powder

Heat chicken broth in a large pan. Combine masa harina with 2 cups water in medium bowl; whisk until blended. Add masa mixture to the broth. Add remaining water, enchilada sauce, cheese, and spices. Bring to a boil. Add shredded chicken. Reduce heat and simmer for 30-40 minutes. Serve with shredded cheese, crumbled tortilla chips, and pico de gallo.

  3. To be honest, I am not exactly sure myself. We use Corn Masa Mix, which I find on the ethnic aisle at Meijer. I was told it does the same thing. Probably need to check an authentic Mexican grocer for the real thing!
    The soup has a bit of the corn tortilla taste to it, and I am sure that comes from the corn masa.
