Soup-er Saturday

Winter in Michigan inspires soup-er experimentation.
Soup happens to be on our menu at least once a week.

~Does your family consider soup a meal?
~What are your favorite soup side dishes and/or add ins?

I thought it would be fun to share some soup-er recipes with each other.
To get started, here is the soup we tried this week:

Cheddar Ham Chowder

2 1/2 c.water
2 c. potatoes (peeled & cubed)
1/2 c. sliced celery
1/4 c. chopped onion
1 tsp. salt
1/2 tsp. pepper
1/4 c. butter
1/4 c. flour
2 c. milk
2 c. cheddar cheese
16 oz. frozen corn
1 1/2 c. cubed ham (I know it's in the name, but I prefer this without ham)

Bring water, potatoes, carrots, celery, onion, salt, and pepper to boil. Reduce heat, cover, and simmer for 10 minutes. Set aside. In a second pan, melt butter; blend in flour. Add milk; cook and stir until thick and bubbly. Add cheese and stir until melted. Stir in other veggies (include broth); add corn and ham. Heat thoroughly, stirring occasionally.

  1. Yum yum! That looks so good Katie! I love soup for meals and love making it. I make extra and freeze it for later. Unfortunately, Jeremy doesn't consider it a meal, so if I make it, it has to be with a meal rather than as a meal. A good bread is a MUST to go with! I have a good spicy lentil soup recipe that I use. Will have to dig it out and share!

  2. Hey Katie, great idea and you're right soups are totally the thing for a cold MI day. Just happened to post one yesterday, so I'll come join in on the fun. Never liked soups when I was a little kid, but now I appreciate them a lot more. We'll have to try your Cheddar Ham Chowder too, looks good and I think ER's going to really slurp it down. She likes everything in it!

  3. Your soup looks so good! I often forget to pull out my soup recipes because the kids are not fans... but the one I posted to my blog is worth making even if Patrick and I eat the whole pot ourselves. :)

  4. What a great idea, Katie! Dave and I both love soup so I'm always up for new recipes. The ingredient list for the chili is long, but nothing is all that unusual (except for the celery salt...). Enjoy.

  5. This soup looks delicious! I can't wait to make it. And what a great way to use leftover ham. The recipe I posted is a family favorite. What's best is that our 6 and 3 year olds love it!
